- 6 lb bone in turkey breast I use a half breast
- 5 tablespoons butter softened
- 1 teaspoon minced garlic
- 1 tablespoon sage leaves finely minced
- 1 1/2 teaspoons rosemary leaves finely minced
- 1 tablespoon thyme leaves finely minced
- 2 tablespoons parsley finely minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Rosemary sprigs for garnish optional
- Cooking spray
Instructions
Preheat and Prepare: Set the oven to 450°F (232°C). Lightly coat a baking dish with cooking spray.
Mix Herb Butter: In a bowl, combine softened butter, minced garlic, sage, rosemary, thyme, parsley, salt, and pepper until well blended.
Apply Butter Mixture: Gently loosen the turkey breast skin without detaching it. Spread half of the herb butter beneath the skin and the remaining half over the top.
Initial Roasting: Place the turkey breast in the prepared baking dish. Roast in the preheated oven for 15–20 minutes, or until the skin begins to brown.
Continue Roasting: Lower the oven temperature to 350°F (177°C). Continue roasting for about 1 hour and 15 minutes, occasionally basting with pan juices.
Check Temperature: Insert a meat thermometer into the thickest part of the breast. Once it reads at least 160°F (71°C), remove the turkey from the oven.

Rest and Serve: Cover the turkey with foil and let it rest for 5–10 minutes, allowing the internal temperature to reach 165°F (74°C). Garnish with rosemary sprigs if desired, carve, and serve.
