Ingredients
- 2 small tomatoes
- 1 small onion
- 1 medium jalapeno pepper, chopped
- 2 cloves garlic; 1 chopped, 1 smashed
- 1/2 teaspoon hot sauce
- 1 teaspoon ground cumin
- Salt and freshly ground pepper
- 2 tablespoons plus 2 teaspoons olive oil
- 1 15.5-ounce can black beans, drained and rinsed
- 4 large eggs
- 4 6-inch corn tortillas, warmed
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
Instructions
Prepare the Salsa:
Using a grater set over a large bowl, grate the tomatoes and onion. Add the chopped jalapeño, garlic, hot sauce, cumin, and a pinch of salt and pepper. Mix well to combine.
Cook the Salsa:
Heat 2 teaspoons of olive oil in a medium skillet over low heat. Add the salsa mixture and cook for about 3 minutes, stirring occasionally, until it thickens slightly. Transfer the cooked salsa to a bowl and set aside.
Warm the Beans:
In the same skillet, add the black beans, smashed garlic, 1/2 cup of warm water, and a pinch of salt. Cook over low heat, stirring and lightly mashing the beans with a fork, until warmed through.
Cook the Eggs:
Heat the remaining 2 tablespoons of olive oil in a separate skillet. Crack the eggs into the skillet and cook them sunny-side up. Season with freshly ground pepper.
Assemble and Serve:
Place one warmed tortilla on each plate. Divide the beans evenly among the tortillas, then top each with a sunny-side-up egg, a spoonful of salsa, and crumbled feta cheese. Garnish with chopped cilantro and serve with the remaining salsa on the side. Enjoy!
