Preheat & Prep Apples
Preheat your oven to 375°F. Use an apple corer to remove the stem and core, but if you don’t have one, a melon baller or a paring knife (be careful!) can work too. Leave the bottom intact.
Make the Filling
In a bowl, combine brown sugar, oatmeal, walnuts, raisins, cinnamon, nutmeg, ground cloves, and salt. Stuff this mixture into the hollowed-out apples. If you have extra filling, you can use it in another apple or save it for a later dessert adventure!
Assemble & Bake
Place the stuffed apples in your 8-inch baking dish. Add half the vegan margarine on top of each apple if you’re using it. Pour boiling water into the dish, cover loosely with foil, and bake for 20 minutes. Remove the foil and bake for an additional 20 minutes until the apples are tender.
Serve & Enjoy
Take the apples out of the oven, place them on a plate, and let them cool for 5-10 minutes. Alternatively, you can re-cover with foil and let them sit for up to 30 minutes for a softer texture.
Notes
Customize Your Filling:
Mix things up with different nuts! Try almonds or pecans instead of walnuts, or skip the nuts altogether if you prefer a nut-free dessert.
Stability Trick: Struggling to keep your apples upright? Slice a thin piece off the bottom of the apple to level it out. Just make sure you don’t break into the hollowed core section.
