Ingredients
- 12 oz udon or rice noodles
- 2 tbsp reduced sodium soy sauce
- 1 tbsp brown sugar
- 1/2 tsp black pepper
- 2 tbsp cornstarch
- 14 oz firm tofu
- 3 tbsp canola oil or avocado oil
- 2 green onions thinly sliced
- 1” slice of ginger
- 1/2 red chile sliced
- 2 bunches baby bok choy, stems sliced
- 2 cloves garlic, chopped
Instructions
Cook the Noodles: Prepare udon noodles according to the package directions.
Mix the Sauce: In a small bowl, whisk together soy sauce, sugar, pepper, 1 teaspoon cornstarch, and 1/4 cup water until smooth.
Prep and Cook the Tofu: Press tofu with paper towels to remove excess liquid. Cut into 3/4-inch pieces and coat with the remaining 2 tablespoons of cornstarch.
Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add tofu and cook until golden on all sides, about 6-8 minutes. Transfer to a plate and wipe the skillet clean.
Saute the aromatics and veggies: Heat the remaining tablespoon of oil in the skillet. Add scallions, ginger, garlic, and half the red chili. Cook for 1 minute, then add bok choy and toss for 2 minutes.
Combine tofu and sauce: Return tofu to the skillet, toss to combine, and pour in the soy sauce mixture. Simmer for 1-2 minutes, stirring to create a sticky sauce.
Assemble and serve: Spoon the mixture over noodles and garnish with scallions, remaining red chili, and peanuts. Enjoy!
