  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk
  • ⅓ cup vegetable oil

  • ½ cup hot water

Frosting:

  • 1 cup butter (softened)
  • 2 cups powdered sugar
  • ½ cup cocoa powder
  • 2 tbsp milk
  • 1 tsp vanilla extract

Toppings (for the nest):

  • 1 cup shredded coconut or crushed pretzels
  • ¼ cup melted chocolate (to help shape the nest)
  • Candy eggs (Mini Cadbury Eggs, M&Ms, or jellybeans)

Instructions

1. Prepare the Cupcake Batter

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.

  • Stir in hot water (batter will be thin—this is normal).

2. Bake the Cupcakes

  • Divide the batter evenly among the cupcake liners, filling 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cupcakes cool completely before frosting.

3. Make the Chocolate Frosting

  • Using an electric mixer, beat the butter until smooth.
  • Add powdered sugar, cocoa powder, vanilla, and milk, beating until fluffy.

4. Create the Chocolate Nests

  • In a small bowl, mix shredded coconut or crushed pretzels with melted chocolate.
  • Shape into small "nests" and place them on wax paper to set.

5. Decorate the Cupcakes

  • Pipe chocolate frosting onto cooled cupcakes.
  • Gently press a chocolate nest on top of each frosted cupcake.
