Ingredients
- 6-8 cups cauliflower - chopped into 1-inch pieces (I used 1 1/2 heads of cauliflower)
- 2 tablespoons butter
- 3 tablespoons flour, can sub for GF or oat flour
- 2 cups whole milk
- 1 ½ teaspoons salt
- ¼ teaspoon cracked black pepper
- ½ teaspoon garlic powder
- 2 cups shredded sharp cheddar cheese - 8 ounces (can sub for low fat)
Instructions
Preheat the oven to 375°F.
Microwave: Place the cauliflower in a microwave-safe bowl with about 1 inch of water. Microwave on high for 8 minutes, then drain and set aside.
Combine Ingredients: In a large saucepan over medium heat, melt the butter. Stir in the flour and cook for about 3 minutes, stirring continuously.
Gradually whisk in the milk, a little at a time, until the mixture is thick, smooth, and fully incorporated.
Remove the saucepan from heat and add the salt, pepper, garlic powder, and shredded cheese. Stir until the cheese is completely melted and the sauce is smooth.
Add the cauliflower to the cheese sauce and stir to coat.
Bake: Transfer the mixture to a 9×13-inch baking dish. Bake for 25 minutes, until the cheese is bubbly and lightly browned. For a crispier top, broil for an additional 2-4 minutes.
Serve and Enjoy: Let the dish cool slightly before serving, as it will be very hot. Enjoy!

Avoid using pre-shredded cheese! While it may seem convenient, pre-shredded cheese is coated with additives to prevent clumping, which can stop it from melting smoothly and leave your sauce grainy. Instead, shred the cheese yourself for the best results.
