- 1.5 to 1.75 pounds skin-on salmon fillet
- 1 lemon, sliced into thin rounds
- ½ cup unsalted butter, melted
- 3 tablespoons lemon juice, from about 1 lemon
- 2 to 3 tablespoons honey
- 5 cloves garlic, finely pressed or minced; or to taste
- 1 teaspoon kosher salt, or to taste
- ½ teaspoon freshly ground black pepper, or to taste
- 2 teaspoons finely chopped fresh parsley, optional for garnishing
Instructions
Prepare the Salmon
Preheat the oven to 375°F. Place the salmon skin-side down on a sheet of foil on a baking sheet, aligning the longer side of the salmon with the longer side of the foil. Fold up the edges of the foil about 2 inches to contain the buttery mixture. Arrange lemon slices evenly underneath the salmon and set aside.
Make the Butter Mixture
In a microwave-safe bowl, melt the butter for about 1 minute. Stir in the lemon juice, honey, and garlic. Pour about three-quarters of the mixture over the salmon, reserving the rest. Season the salmon with salt and pepper.
Seal and Bake
Seal the foil tightly, adding an extra sheet if needed, and crimp the edges to create an airtight packet. If time allows, let the salmon marinate for 10-15 minutes for enhanced flavor. Place the foil packet on a baking sheet and bake for about 17 minutes.
Broil and Finish
Carefully open the foil to expose the salmon while keeping the edges raised to contain the juices. Spoon the reserved buttery mixture over the salmon, if needed. Broil on high for 5-10 minutes until the salmon is golden and caramelized.
