- 1 red bell pepper chopped
- 1/2 onion, finely chopped
- 4 tortillas
- 14 oz can refried beans
- Garnish with pickled onions, cilantro, or mango
Instructions
Prepare and preheat vegetables: Preheat the oven to 425°F. Slice portobellos into ½-inch wedges, bell peppers into ½-inch strips, and onions into ½-inch rings or half moons. Arrange them on a parchment-lined baking sheet.
Make and apply Marinade: In a small bowl, mix the marinade ingredients. Brush the mushrooms generously on both sides with the marinade, then lightly coat the bell peppers and onions. Sprinkle the portobellos with salt.
Roast the vegetables: Roast in the oven for 20 minutes or until the portobellos are fork-tender.
Prepare the beans and garnishes: While the vegetables roast, heat the refried beans and prepare any additional garnishes.
Assemble the Tacos: Warm the tortillas (over a gas flame or in a toaster oven). Spread each tortilla with refried beans, then add the roasted portobellos, peppers, and onions. Top with cilantro crema, salsa, avocado, fresh cilantro, or pickled onions as desired. Enjoy!
