Ingredients

- 2 tbsp honey or maple syrup
- ½ tsp vanilla extract
- 1-2 tbsp milk
For the Caramel Layer:
- 8 soft dates, pitted
- 2 tbsp peanut butter (or almond butter)
- 2 tbsp milk
- ¼ tsp salt
- ¼ tsp vanilla extract
- ¼ cup chopped roasted peanuts
For the Chocolate Coating:
- ½ cup dark chocolate chips (70% or higher)
- 1 tsp coconut oil
Instructions
- Make the Nougat Layer:
- In a bowl, mix almond flour, peanut butter, honey (or maple syrup), and vanilla.
- Stir until a dough forms. If it’s too dry, add milk little by little.
- Press the mixture into a parchment-lined pan or roll it into small bite-sized pieces.
- Place in the freezer for 10-15 minutes.
2. Prepare the Caramel Layer:
- Blend the dates, peanut butter, milk, salt, and vanilla until smooth and creamy.
- Stir in the chopped peanuts for crunch.
- Spread the caramel over the nougat layer or top each bite if making individual pieces.
- Freeze again for 20 minutes until firm.
3. Coat with Chocolate:
- Melt dark chocolate and coconut oil in a microwave or over a double boiler.
