Ingredients
- ¾ cup full-fat plain Greek yogurt
- ¾ cup cottage cheese
- ⅓ cup mayonnaise
- 1 14 oz can artichoke hearts packed in water, drained Well, squeezed and patted dry
- 6 ounces thawed frozen spinach, squeezed well to release liquid
- 2 garlic cloves, minced
- ¼ cup grated or shredded parmesan cheese
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper, plus more to taste
- ⅛ teaspoon sea salt
- 1 cup shredded mozzarella cheese, divided
- Pinch of salt, if needed
- Crackers, chips, veggies and/or bread, for serving
Instructions
Preheat the oven to 375°F and lightly coat a small baking dish (such as an 8×8 glass dish) with cooking spray.
Blend the Greek yogurt and cottage cheese in a blender or food processor until smooth. Add the mayonnaise, artichokes, spinach, and garlic, then pulse until well combined.
Transfer the mixture to a bowl and stir in the parmesan cheese, ¾ cup of mozzarella, onion powder, pepper, and salt.
Spread the mixture evenly into the prepared baking dish and top with the remaining ¼ cup of mozzarella cheese.
Bake for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden. For extra browning, broil for an additional 1-2 minutes.
Serve warm with your choice of bread, crackers, chips, or veggies.
Notes
Using Fresh Spinach: Cook 10-12 ounces of fresh spinach in a pan until wilted. Let it cool, squeeze out any excess liquid, roughly chop, and use as directed in the recipe.
Quickly Thaw Frozen Spinach: To speed up thawing, place the spinach in a strainer and run warm or hot water over it until thawed. Be sure to squeeze out any excess liquid afterward.
No Food Processor?: If you don’t have a food processor, a hand mixer works just as well to combine the ingredients.
