Ingredients
- 1 (17-oz) container of plain hummus
- 1/2 cup reduced-fat, crumbled feta cheese
- 1/4 cup thinly sliced green onions ( about 2 onions)
- 3/4 cup chopped Italian flat-leaf parsley
- 1 teaspoon extra virgin olive oil
- 1/16 teaspoon salt
- Cherry tomatoes, halved (~5 tomatoes)
- 1 large red pepper, optional
- 1 - 1 1/2 tablespoons very finely crumbled, reduced-fat feta cheese
- Optional dippers for serving: whole-grain pita chips, whole-wheat pita bread, or veggies
Instructions
- In a medium bowl, mix the hummus, 1/2 cup of feta, and green onions until well combined.
- Place a small bowl or drinking glass in the center of a large, round platter (about 12.5 inches in diameter). If you plan to serve pita chips or veggies in the center of the wreath, use that serving bowl to ensure the center hole is the right size.
- Spread the hummus mixture in a circle around the bowl or glass using a rubber scraper, forming the wreath shape.
- Gently remove the bowl or glass with an upward twisting motion. If needed, use the tip of a toothpick to help release it.
- In a small bowl, toss the parsley with olive oil and salt until evenly coated. Spoon the parsley mixture on top of the hummus layer, leaving a small border of hummus showing around the edges.
- Place the halved cherry tomatoes, cut-side down, across the parsley layer to resemble Christmas ornaments.
- For the optional red pepper bow, cut a flat side off the pepper and use a bow-shaped cookie cutter to press through the slice. Add the bow to the wreath.
- Lightly sprinkle 1 to 1 1/2 tablespoons of finely crumbled feta over the entire wreath to resemble snow.
- Serve immediately with your choice of dippers, or cover and refrigerate for up to 1-2 days. Enjoy!
