Ingredients

For the Pulled Pork:

  • 2 lbs pork tenderloin (leaner than pork shoulder)
  • 1 cup low-sugar BBQ sauce (or homemade, see below)
  • ½ cup low-sodium chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper

For the Homemade BBQ Sauce (Optional, Healthier Alternative):

  • ¾ cup tomato sauce (no added sugar)
  • 2 tbsp honey or maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Dash of hot sauce (optional for heat)

For the Sliders:

  • 8-10 whole grain slider buns
  • 1 cup coleslaw mix (cabbage & carrots)
  • 2 tbsp Greek yogurt (healthier alternative to mayo)
  • 1 tsp apple cider vinegar
  • ¼ tsp honey
  • ¼ tsp salt & pepper

Instructions

Prepare the Pulled Pork:

  • Place pork tenderloin in a slow cooker and add broth, apple cider vinegar, mustard, smoked paprika, garlic powder, onion powder, and black pepper.
  • Cook on low for 6-7 hours or high for 3-4 hours, until the pork is tender and easily shreds with a fork.

Make the BBQ Sauce (if using homemade):

  • In a small saucepan, whisk together all BBQ sauce ingredients.
  • Simmer on low heat for 10 minutes, stirring occasionally.

Shred the Pork:

  • Remove pork from the slow cooker and shred with two forks.
  • Stir in the BBQ sauce and let it soak in for 10-15 minutes on low heat.

Prepare the Slaw:

  • In a bowl, mix coleslaw mix, Greek yogurt, apple cider vinegar, honey, salt, and pepper.
